Enjoy! I promise you will! There are two separate recipes here, one for the veggie burger, one for the secret sauce. If you are looking to please a crowd, this is it! And… if you are looking to convert someone to veganism, this will work! Non-vegans love this too!
-1 cup cooked rice and 1 cup quinoa cooked together
-1 can black beans
-1 roasted sweet potato.
-Spices to taste (I used garlic and pepper)
All you do is put all of these ingredients into a food processor until blended. Make into patties, cook on the griddle! Yep! That’s it!
*In a pinch, you could seriously just make the patties with rice and beans, blended.
-3/4 cup Vegan Mayo/Veganaise *See below
-3 tbsp relish
-1 tbsp paprika
-1 tsp onion powder
-1 tsp garlic powder or garlic salt
Stir. Yep! It’s done!
Now, build your burger with patties between 3 buns. Top with diced sweet onions, shredded lettuce and tomatoes! (PS: Lately, I’ve been dicing onions and shredding lettuce in the food processor! It’s so much easier than a knife and cutting board. It only takes like 4-5 pushes of the “pulse” button.)
**For the vegan mayonaise, if you don’t have Veganaise on hand, you can make your own by blending in a food processor: 1 brick medium-firm tofu, 1 tbsp brown sugar, 1.5 tbsp dijon mustard, 1 tbsp vinegar
