When I was about 10 years old, my childhood friend and I were entrepreneurs for the summer. We created a lavender business called Emilanna, (her name was Emily and mine, Anna). For the entire summer, we created lavender products like cookies, sachets, candles and cookies. We setup a roadside stand, kind of like a lemonade stand, except way better. In one weekend we made $200! Now, 20 years later, every time I smell lavender, I think of that summer. Here is an easy recipe for my soft and fragrant vegan lavender cookies.

You’ll need:

1/2 cup vegetable shortening

1/2 cup vegan butter (I used vegan Becel)

1 1/4 cups sugar

2 flax eggs (1 tbsp flax seed meal mixed with 3 tbsp water per egg)

1 tsp vanilla extract

2 1/4 cups flour

4 tsp dried lavender

1 1/2 tsp baking powder

Preheat Oven to 350

With fork, blend:



-Flax Eggs


Then add in:



-Baking Powder

Bake for 10-12 mins and voila!
